Simple Doesn't Mean Boring

Personal Bite:

When I met my husband, this man did not eat salads. Salads?....he barely ate vegetables! In fact, in order to get him to eat vegetables, I started off with a veggie tray. Then I made salads with plain lettuce and the same veggies from the veggie trays. The key? Simplicity. Because being from Texas, what he wanted was a "lettuce wedge." What? That's not a salad!

Let's tear up those lettuce leaves. Now, no veggies he didn't like, or wouldn't try. Not at first.

But, gradually, I was able to get him to try more and more vegetables until finally, I could throw together a colorful salad....and he'd eat it!

Here's the thing: Simple doesn't mean boring. Period. Make your most simple salad, then switch up the additional veggies for a totally different taste and feel.

Today's Awareness

Salad generally isn’t something we search around to find new recipes for — it’s usually the same old routine, which can indeed become drab.

But guess what?  It doesn’t have to be that way. 

It’s time to mix things up and make salads exciting, delicious and something you crave. And once you get creative and find your personal flow, this will undoubtedly be the case! 

I certainly don’t have to convince you that salads are good for you, right?  I mean, salads generously provide you a healthy helping of nutrient-packed greens, nourishing raw veggies and an extra pep in your step afterwards. Natural energy. Bam!  

With so many perks all in one bowl, it’s time to re-kindle your relationship with salads and get them back on your plate. Oh yeah.

Here are 3 tips for making killer salads that you (and your family) will long for:

  1. Use ingredients that are fresh and in season. This keeps variety in the picture. Take a trip to the Farmers Market or your local healthy grocery store to pick up some local, fresh and in season produce…your taste buds will thank you.
  2. Mix it up.  Get creative with your ingredients and play with mixing textures.  Combining raw veggies with one cooked veggie can really take it up a notch.  For example, roasting some broccoli, mushrooms or onions to add to your salad will add an interesting and delicious element to your plate.  Do you already have some ideas brewing?  Don’t forget the fruit!  Adding berries to a summer salad is refreshing and quenches that taste for something sweet.
  3. Spin your greens.  After you wash your greens, spinning them dry will help them not become soggy or too wet to absorb your ingredients and dressing.  So break out that Salad Spinner and spin away! 

 

Personal Story

I am The Queen of Veggies. Yep. Veggie tray. Check. Simple salad. Check. Salad buffet. Check! What I love to do is spin my greens, then chop up a variety of veggies and store them in separate containers. What this does is allow everyone to add their own veggies according to their own personal taste. Of course, if we can agree on the main ones, I'll mix those in, and have the others on the side for "extra special" toppings. Yum! This allows me, The Queen of Veggies, to have all the vegetables I want available.

Last week I held my Mindset Shift 5-Day Challenge (For More JOY in Your LIfe). We used my app for the lessons and checkins, participants also had access to me via messaging and an online journal for another level of accountability if they chose to. Plus, I did a daily FB Live checkin. We closed it out on the Bonus Day with a Bonus Coach Walk. Wow...some of us met up on the phone for a group call and walk. SO FUN!
